ENOLOGICAL DATA
Red vinification: Elimination of the stems, inoculation of selected yeasts, maceration for approximately 10 days at temperatures not exceeding 26°C to favor the extraction of the coloring substances contained in the grape skins with repeated punching down and delestage. Separation of the seeds on the fifth day to retain the soft tannins of the wine.
Malolactic fermentation: With selected bacteria inoculated at the same time as the start of alcoholic fermentation.
Aging in steel: approx. 18 months with rest on the yeasts
