OENOLOGICAL DATA

White wine making: removal of stems, inoculation of selected yeast, maceration for about 12 days at temperatures not exceeding 26° C. to facilitate the extraction of the coloring substance contained in the skin of the grapes with repeated punching and wise delestage. Separation of grape seeds on the fifth day in order to maintain the soft tannins in the wine. Maceration fo 18 days.

Refinement in steel: 12 months

Aging in wood: 36 months
