OENOLOGICAL DATA
White vinification: separation of stalks and skins, static clarification, inoculation of selected yeasts, fermentation in low-toasted acacia barriques for approximately 45 days at temperatures no higher than 10° C to retain the aromas.
During the final part of the alcoholic fermentation, continuous batonnage is carried out to increase the sensation of body of the wine.
Aging in barriques: approximately 10 months
