OENOLOGICAL DATA

White wine making: separation of stalks and skins, static clarification, inoculation of selected yeasts, fermentation for about 30 days at temperatures not exceeding 13° C. to retain the scents. The final phase of fermentation takes place in acacia and low toasted oak barriques at controlled temperature. During the final part of the alcoholic fermentation are made continues batonnage to increase the sensation of body oof the wine. The aging in barriques will contine for about 10 months.

Malolactic fermentation: With selected bacteria inoculated at the same time as the start of alcoholic fermentation.

Refinement in steel: 18 months
